Making Four Meals Out Of One Chicken

Frugal Upstate tries to stretch one chicken into meals for four days.

Day 1
She starts by roasting the chicken for dinner the first night, then pulls remaining meat off the bone for the next few meals. She also starts to boil the bones with a little meat left on them to make stock for chicken soup.

Day 2
Chicken stock, veggies, a little chicken meat and ramen noodles become chicken noodle soup.

Day 3
She makes her favorite stuffing / dressing recipe and cooks some leftover chicken on top to make a chicken stuffing casserole w/ gravy. I’ve never done this, it sound very yummy.

Day 4
The last meal is Chicken curry. I really wish she’d shared her recipe in the video.

    OK, am I the only one who thinks that their family would eat a lot more than hers at a given meal? When I saw what was left over after each meal, I thought, “Um, not at my house!” So I’m just wondering if I’m the only one! But other than that, I thought it was a wonderful, wonderful video. Thank you for doing it!
